Cake Flavor Options

Choose your favorite sponge, filling, frosting, and decor options above to order your custom cake. From filling to frosting, each component of our cakes is meticulously homemade with fresh, premium ingredients. Ray finds clever ways to add extra texture and flavor to each bite for an absolutely delicious result.

Here’s a breakdown of each type of hand-crafted filling:

• Sauce – We offer a decadent salted caramel sauce. It’s definitely a top seller.
• Mousse – Our rich mousse is creamy and packed with fresh flavor. The strawberry mousse is a crowd favorite.
• Gelée – For a sweet, jellied filling, opt for our fruity gelée filling made with fresh fruit purée.
• Compote – Our delicious compotes are a perfectly balanced mix of sweet and tart with large bits of fresh fruit for added texture.
• Curd – This quintessential British spread adds a perfect citrusy punch to each bite and pairs wonderfully with a vanilla sponge.

Please note that it is possible to request more than one filling. For example, the salted caramel sauce or cherry gelée pair well with the chocolate mousse. If you would like to add more than one filling, please note your request in the “Flavor and style preferences” box above. Prices are subject to change with additions.

The default frosting is vanilla buttercream unless another flavor is requested.

• Salted Caramel Cake – Chocolate or vanilla sponge with salted caramel filling and finished with salted caramel buttercream. Add chocolate mousse for an extra indulgent bite.
• Espresso Chocolate Cake – Chocolate sponge with chocolate mousse filling and frosted with chocolate ganache, all enriched with espresso.
• Key Lime Pie Cake – Vanilla sponge filled with lime curd and graham cracker crumble, topped with vanilla buttercream.
• Chocolate Cherry Cake  – Chocolate sponge filled with chocolate mousse and cherry gelée made with a red wine reduction, topped with chocolate ganache.

Decoration Options (see photos above in order of appearance)

Fresh Flowers – If you’d like to add fresh flowers to your cake, please select this option. Feel free to specify a color preference. However, it will ultimately be the baker’s choice as they are dependent upon availability at the flower market.

Fondant – Select this option for a hand-made work of art featuring a modern, contemporary, or abstract design. Please note that we ask that you trust our cake artist Ray and give her the freedom to create a modern, fresh design. We prefer not to copy other people’s cakes and not recreate our own past projects exactly as they appear in our gallery. You may tell us what base color you would like. For example, light pink with gold highlights, soft blue, etc.

Wafer Paper – Choose wafer paper decorations for a modern take on a floral cake design. Ray uses wafer, or rice paper to create edgy masterpieces softened by floral shapes and colors.

Delivery & Pick-Up Options

Delivery – Please let us know if you’ll need your cake delivered. Delivery cost is a flat rate of $35 extra if your delivery address is within 10 miles of our location. If the distance exceeds 10 miles, then it’s an additional $2.50 cents per mile. Our shop address is 624 N Trezevant Street, Memphis, TN. If you select delivery from the drop-down menu above, we will contact you after you place your order to arrange the delivery and process a separate transaction for the delivery cost.

Pick-Up – We are very flexible and can accommodate virtually any pick-up time with sufficient advanced notice. We highly recommend that two people come to pick the cake up. This is because the cake box should NOT be placed on an uneven passenger seat in a car. It’s much safer resting on the legs of a passenger or, in a worst-case scenario, on the floor if properly secured. However, a two-person pick-up is ideal. If you select the pick-up option from the drop-down menu above, we will coordinate with you for the delivery time. Pick-up incurs no additional charge.
